Ingredients: 500g whelks - 2 shallots - 1 clove garlic - 3 bay leaves- 3 sprigs of thyme - 1 stalk celery - salt and pepper
First soak whelks for two hours in salt water very cold.
Then wash them well.
Cut the shallots in half, do not peel! Crush the garlic, chop thecelery.
Heat a pan and pour the shallots, garlic and half of the celery.
Stir for a minute or two and add the whelks. Mix well then cover with water, about½ liter of water. Salt and pepper and cookon low heat for 20 to 25 minutes, stirring occasionally.
When whelks are cooked, remove them from the brothand serve with mustard mayonnaise.
Serve together with the filtered broth remaining celery.
