For exotic fruit compote: 1 mango - Juice of 1 passion fruit - juice and zest of 1/2 lime juice - 2 tbsp soft brown sugarTo make the batter, place all ingredients, flour, Maïzena, rice coconut milk, desiccated coconut, baking powder and a pinch of salt in a bowl and mix well. Let stand 30 minutes.Peel the mango and cut it into cubes.Pour into a saucepanmango, passion fruit, lemon juice and lemon zest, sugar and water 5cl. Cook over medium heat for twenty minutes, stirring regularly.
Cook crêpes in a hot frying pan with a bite of fat.
Once the pancakes are ready, spread some compote on top, roll the crepe into a cone and eat!
