A few days ago, I really wanted to eat tapioca even though it's not something I am used to eating... The only time I had it was for a desert in a lot of coco milk and it was so good that I decided to get inspiration from this (longtime) experience to make my recipe. Because the taste isn't too strong, I have decided to associate it with a simple homemade coulis made with strawberries and raspberries to add a sugary and acid touch. So delicious!
Ingredients (for 4 persons):
-2oz of tapioca
-2 cups of coco milk
-3/4 cup of milk
-2 tablespoons of sugar
-1 teaspoon of vanilla extract
-3,5oz of raspberries
-0,7oz of strawberries
In a saucepan, pour the milk, the coco milk, the sugar and the tapioca. Cook on a low heat while stirring for 10 minutes. Let it cool.
Meanwhile, mix the strawberries and the raspberries in a blender and pour this coulis at the bottom of 4 glasses. Pour the tapioca batter above and put it in the fridge for at least one hour.
