Making original foie gras canapés is not easy, we often find the classic association such as figs, onions, mango, in classic shapes...So one day when I found a recipe where they transformed chutney into jelly I thought it was an excellent and original idea! When I decided to do it I thought that instead of using chutney I could use muscat because it goes so nicely with foie gras! That's how I "created" those canapés with a classic shape but an original taste! Ingredients (for 12 canapé):-3oz of foie gras-4 slices of bread without crust-1 cup of Muscat-1 teaspoon of agar-agarIn a sauce pan heat the muscat and the agar-agar until it boils. Pour this preparation in a rectangular dish and than place it in the fridge for at least 3 hours so it becomes jelly. But be careful the jelly must be thin.Grill the bread until golden. Cut the foie gras in thin slices. With a cookie cutter cut the jelly, the foie gras and the bread so they can have the same shape. Make a sandwich with the bread than the jelly than the foie gras than the jelly again and the bread or you can skip adding the last piece of jelly and bread.
