Une fois a la maison j'ai eu vite fait de trouver une recette sur Internet. Inspiree par le stand du fermier j'ai fait une version avec un peu de cream cheese qui adoucit le gout encore plus. J'avais aussi acheté un pain frais sur le marché.En temps normal Hubby ne prends pas vraiment de casse-croute en rentrant du travail. Mais cette semaine là tous les soirs il se coupait une tranche (ou deux) de pain et étalait le pesto dessus avant de se régaler.
Do you know garlic scapes? In the spring the garlic farmers have to cut off the flower stem to allow garlic to grow better. And it so happens to be edible. It's one of those produces like aspargus, only available for a few short weeks on the markets.
Since I'm always curious when I go to the market I enquired what those twirly things were. I was told that garlic scapes have the taste of garlic but in lighter more delicate way. It's great raw, on salads for example, or lightly steamed or sauteed.
I didn't pay much attention to it until I came upon a garlic scapes pesto available to taste at a farmer's stand. Needless to say I purchased scapes from the same farmer.
Once home I was quick to find a recipe online. Inspired by the farmer I made a version with cream cheese to make it even lighter. I had also purchased some fresh baguette.
Usually Hubby doesn't really snack when he comes home from work. But that week, every evening he would come home, cut himself a slice (or two) of bread and spread the garlic scapes pesto on it to enjoy.
1/2 tasse de Parmesan Reggiano en cubes ou rapé
1/2 cc de sel
1 pincée de poivre
Placer tous les ingredients sauf l'huile dans le mixeur et reduire en purée. Ajouter ensuite l'huile petit à petit jusqu'à obtenir la consistance voulue. Dans mon cas j'ai mis bien moins de 3/4 de tasse d'huile.
Pour les gourmands, y rajouter du fromage frais (creme cheese) ici.
Se surgèle facilement.

Note: I didn't put anywhere near the 3/4 cup of olive oil, I reached the right texture much quicker than that.It freezes really well.
