Sometimes I have my “meat and potato” days. Fortunately, it’s quite rare. This post is about one of those meals! I just wanted to eat some meat and all I had on hand was a chicken. I promise you though that I served it with some green salad! I made this curry, that’s full of flavour, quite rapidly. So it is one ideal recipe for a weekday meal.Simple chicken curryIngredients:1 chicken, cut in 81 sliced onion1 garlic clove, sliced1 tsp whole pepper5 cloves1 bay leaf2 cm cinnamon stick5 cardamom pods1 tsp chilli or paprika powder½ tsp turmericSalt and pepper1 tbsp oil4 potatoes, peeled and cut in halfMethod Put the whole pepper, cloves, bay leaf, cinnamon and cardamom in a tea ball.Cover with water and cook the chicken with the onion, garlic, the tea ball and salt for around half an hour till cooked.Drain, separating the stock, chicken pieces, onion & garlic and the tea ball.Heat oil and fry the onion and garlic, mashing to a paste.Add chilli/paprika, turmeric and the stock.One may add the spices in the tea ball crushed.Bring to a boil and season.Add potatoes and cook till half done.Slide in the chicken pieces and cook till potatoes are cooked.Serve with rice and veggies.
