I will try to come back more regularly on my blog because I left it for a while… And I miss it! I had several things to do and some unexpected time. And actually now I have sold my camera to buy a new one. I’m still hesitating between two models from Nikon and Canon. Thankfully I have many recipes I’d like to share with you.
Today, I’m gonna share an exotic and party-related recipes. Verrines and Cuillères. Nothing “new” in terms of presentation, but well appreciated when it comes to the taste and lovely individual portions.
Avocado and grapefruit Cuillères: with juicy grapefruit and cooked avocado in a tablespoon of olive oil, fresh garlic & ginger, a pinch if curry powder, white pepper, brown sugar, some coconut milk, soya & fish sauce, and yuzu juice. Sprinkle with grounded coriander and squeeze a bit more of yuzu juice to serve.
The verrines are made with the same avocado preparation which constitutes the 2nd layer of the verrines. The first one is made with small prawns (200g) cooked quickly in coconut milk (100mL), soya sauce (1tbsp) and curry powder (1tbsp). The last layer is a wonderful sweet and sour mango puree full of flavour made with a fresh, mature and tasty mango, grounded coriander, 2 tbsp sour cream (or crème fraîche), 1tbsp sugar, a filet of balsamic vinegar, fresh coriander and some fleur de sel (vanilla fleur de sel if you have some) to add at the very end.
These 3 layer verrines will transport you, for sure.
